Biltong is an air dried, spiced and salted meat which is made using 100% Qld beef. It undergoes a curing process, with vinegar, spices, salts, and the rest is of course a secret!
It is the way most South Africans prefer to eat their biltong. We use a 100% Australian beef. It is sliced with a portion of fat attached to each strip of meat. This enhances the flavour of the biltong. The spices are added and then air dried for approximately 2 days or so, only. It retains a lot more moisture, has a red appearance in the centre and a soft texture on the palate.
