This Biltong Quiche recipe is a nourishing, protein-rich dish that’s perfect for brunches, dinners, or next-day lunch-boxes. With a gluten-free almond flour crust and a flavourful filling packed with full-fat yoghurt, cheddar, and thinly sliced biltong, this dish balances taste, texture, and nutrition — all in one pan!

For the Crust:
• 500 ml almond flour
• 125 ml finely grated Parmesan cheese
• A pinch of cayenne pepper
• 1 egg
For the Filling:
• 500ml full-fat yoghurt
• 250ml strong cheddar cheese, grated
• 5 eggs
• Salt & pepper (keep in mind: cheese and biltong are already salty)
• 150 g sliced beef biltong
• 1 large onion, chopped and caramelised in butter
• Fresh herbs (basil works beautifully!)
1. Prepare the Oven & Crust
Preheat your oven to 180°C. In a food processor, combine almond flour, parmesan, cayenne, and egg. Blitz until it forms a rough dough.
Spray a quiche pan with oil, press the mixture into the base and sides, then chill in the fridge for 10 minutes.
2. Make the Filling
In a bowl, mix the yoghurt, grated cheddar, eggs, salt, and pepper. Pour the mixture into the prepared crust. Top evenly with caramelised onions and sliced biltong.
3. Bake
Place in the preheated oven and bake for 25–30 minutes or until golden and set. Let it cool slightly before slicing.
4. Serve
Best served warm or at room temperature with a fresh rocket salad and sliced tomatoes on the side.
Swap basil for thyme or chives for a different twist, or add mushrooms for extra depth!
